EAST STROUDSBURG, MONROE COUNTY - Take a pantry full of natural ingredients, toss in a new location and blend with determination: It's the recipe for the new Quench Juice and Smoothie Bar. Owner Nicole Defour said, "I'm a firm believer in new beginnings. And so I always look for the silver lining."

The original Quench was on Main Street in Downtown Stroudsburg. It shared a building with the Carlton House apartments which caught fire in December. Nicole said, "It was devastating."

It was sad for her and her customers. Regular lunch customer Gilbert Janes said, "I missed it I had been going there quite often."

But Nicole didn't quit. She relocated and reopened. Her new shop is in the Four Corners Health and Fitness Center in East Stroudsburg. She said, "Definitely being here where people are already focused on their bodies it's a great place for us to be."

The new location is about ten minutes outside of Stroudsburg but old customers tell us it is worth the trip. Carolyn Brown smiled, "I don't know any place else where you can get the juices and the smoothies and the paninis and the soups that she's added - they are delicious."

Nicole is thankful her customers stuck with her. She said, "I think Quench has some of the best patrons ever."

She hopes her regular patrons and a big helping of new business will help her cook up a deliciously successful shop.

Nicole said she hopes to eventually expand and open another shop in Downtown Stroudsburg. She's not sure when she'll be able to do that.
