Recipe Abernathy Biscuits (Cookie)

Required Ingredients:
- 5 1/2 cups all-purpose flour
- 1 1/2 teaspoons lemon zest
- 1 1/2 cups white sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 cups shortening
- 3 eggs
- 3 tablespoons milk
- 3 tablespoons caraway seed
Preparing/Cooking:
- In a large bowl, combine the flour, sugar, and baking powder.
- Cut in the shortening until the mixture resembles coarse crumbs.
- In another bowl, beat the eggs, milk, seeds and lemon zest until blended well.
- Add to the dry ingredients and blend until smooth.
- If the dough seems a bit stiff, add extra milk, one tablespoon at a time.
- On a floured surface, roll dough out 1/4 inch thick and cut using a 2 inch round cutter.
- Place cookies 2 inches apart on greased cookie sheet.
- Bake in preheated 375 degree F (190 degrees C) oven for 7 to 10 minutes until edges are lightly browned.
- Cool on wire rack.
