Recipe Banana Drops (Cookie)

Required Ingredients:
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 7/8 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup butter
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon banana extract
- 2 eggs
- 3 ripe bananas, mashed
- 1/3 cup chopped walnuts, toasted
Preparing/Cooking:
- Preheat oven to 400 degrees F (200 degrees C).
- Line a cookie sheet with parchment paper.
- In a medium size mixing bowl, sift together flour, baking soda and salt.
- In a separate small bowl, combine 2 tablespoons brown sugar with cinnamon, set aside.
- In a medium size mixing bowl, beat together 3/4 cup brown sugar with the butter or margarine, vanilla and banana extract until the mixture is light in texture.
- Beat in the eggs.
- Mix in the banana.
- Slowly mix the flour mixture into the egg, banana and sugar mixture.
- Fold in nuts.
- Drop the dough by teaspoonful onto the prepared cookie sheet.
- Sprinkle the cookies with the mixture of brown sugar and cinnamon prepared earlier.
- Bake 8 to 10 minutes, until lightly browned.
